An unforgettable night that makes you feel alive.
My encounter with Lake Yamanakako was purely by chance.
Yet, from that moment, something in my life began to quietly, but surely, shift.
For decades, my life has been a journey of connecting Japan and the world through the culture of wine. In my early twenties, I set out on an adventure that would last nearly twenty years, traveling across Australia to visit more than 600 wineries and sharing countless conversations with passionate producers. As time went on, that journey carried me far beyond Australia, to the great wineries and maisons of both the New and Old Worlds—where together, we created unforgettable, once-in-a-lifetime dining experiences.
From an Advisor to Myself
Several years ago, I began supporting Yamanakako Village through tourism
revitalization projects.
My role was that of an external advisor, helping to address local issues.
But deep down, I longed for more.
I wanted to connect with this place not as a supporter —
but as Jiro Kinoshita, the person.
I asked myself:“What can I truly give back to this land — as me?”

A Fateful Idea from Old Friends
One day, I was speaking with two of my closest friends —
Koji Ikuta, a creative director known for cultural projects like Art Aquarium and TECHNOH LAB.,
and Koji Suzuki, an AI producer and trusted companion for over 30 years.
In our casual conversation, Ikuta suddenly said:
“Jiro, what if we combine your world of gastronomy with the breathtaking Mt. Fuji backdrop of HIBIKI?
And then infuse it with traditional Japanese performing arts and cutting-edge technology?
Wouldn’t that create a one-of-a-kind experience in the world?”
In that instant, something clicked.
My role in Yamanakako became crystal clear.
I had to create a night where food, culture, and nature would become one.
And that is how FUJI Dining Out YAMANAKAKO was born.

Both of us were deeply drawn to the untapped potential of “Japanese Cuisine × Wine”—a pairing that was still rare in Japan at the time.
In 1976, his father, Minoru “Monsieur” Odajima, who had trained in Paris in the 1960s alongside the legendary Rokusaburo Michiba, opened Arisugawaand in Hiroo later Kappo Odajima in Shibuya-Shinsen.These restaurants became true pioneers in the art of wine pairing with Japanese cuisine.
From Monsieur, I learned countless lessons about the harmony between wine and food.
It is this philosophy—refined and evolved—that Daisuke Odajima now carries forward.
In his cuisine, there is always a dialogue with wine.
It’s never just about pairing for the sake of it—each dish and each wine enhance one another, creating a resonance that lingers.
This is what has continued to move me over the years.
That is why I knew, without hesitation, that his presence was essential for this challenge we call FUJI Dining Out YAMANAKAKO.
This project is far more than a dinner event.
It is a fully immersive experience designed to create “a night you will never forget.”
Set against the breathtaking backdrop of Mount Fuji and Lake Yamanaka, the stage—HIBIKI—will bring together traditional Japanese culture and cutting-edge technology.
At the heart of it all will be Chef Odajima’s gastronomic kaiseki creations paired perfectly with wines, forming the core of this sensory journey.

Creating a Singular Night WhereCuisine,Culture, and Technology Converge

FUJI Dining Out YAMANAKAKO —For me, this project began the moment I glimpsed what felt like the shape of an ideal future.
Jiro Kinoshita and I have been close friends for over 30 years.His work with wine and gastronomy has never been limited to the culinary sphere. It has always been about cultural dialogue—connecting people beyond borders and language through the shared experience of food and drink.
We were joined by another old friend, Hiroshi Suzuki, a pioneer in the field of AI production.
As the three of us spoke one day, I found myself saying this, almost unconsciously:
“What if we brought together Jiro’s lifetime of culinary expertise, the majestic backdrop of Mt. Fuji, and the unique outdoor venue of HIBIKI—and infused it with technology and traditional Japanese performing arts? Wouldn’t that create a once-in-a-lifetime experience the world has never seen?”
At that moment, something clicked. Quietly, but unmistakably.
We realized that this project wasn’t just the culmination of Jiro’s remarkable career—it was also an opportunity for each of us to bring our deepest creative convictions and capabilities together.
In my own career, through projects like Art Aquarium and TECHNOH LAB., I have sought to fuse Japanese cultural heritage with advanced visual technology, music, and spatial design.
For this project, FUJI Dining Out YAMANAKAKO, I will serve as the overall creative director, designing an experience that awakens all five senses through its visual storytelling, staging, and atmosphere.
The moisture in the evening air. The afterglow of sound. The aroma of food. The shifting colors of the sky.
These are sensory memories that can never be replicated online or filtered through a screen.
In a world increasingly dominated by digital abstraction, I believe that such embodied experiences are among the most profound luxuries we can offer.
Jiro is embracing this project as his “final challenge of his sixties,” a culmination of all that he has built.
I am proud to stand beside him—not only as a longtime friend, but also as a fellow creator—committed to making this moment unforgettable.
May this evening become a singular light in the constellation of our lives.
That is the spirit with which I approach this project—with all my heart and skill.
